This 3-Ingredient Dinner Is My Weeknight Hero

Preheat the Grill: Preheat your grill to medium-high heat. If you don't have a grill, you can also use a grill pan or bake the chicken and vegetables in the oven. 

Prepare the Chicken: Season the chicken breasts or thighs with salt and pepper, if desired. Drizzle a bit of olive oil over the chicken to prevent sticking and enhance flavor. 

Prepare the Vegetables: Wash and chop your choice of vegetables into bite-sized pieces. Common options include bell peppers, zucchini, onions, and cherry tomatoes. Toss the vegetables with olive oil, salt, and pepper in a bowl until evenly coated. 

Grill the Chicken: Place the seasoned chicken on the preheated grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through. 

Roast the Vegetables: While the chicken is grilling, spread the seasoned vegetables in a single layer on a baking sheet lined with parchment paper. Roast in the oven at 400°F (200°C) for 15-20 minutes, or until the vegetables are tender and slightly caramelized. 

Serve: Once the chicken is cooked through and the vegetables are roasted to perfection, remove them from the grill and oven, respectively. Serve the grilled chicken alongside the roasted vegetables for a simple and satisfying dinner.
