How to make gnocchi from stale bread

Soak the Bread: Tear stale bread into small pieces and soak them in milk or water until softened, usually for about 15-20 minutes.

Squeeze Out Excess Liquid: Once softened, squeeze out excess liquid from the bread using your hands or a clean kitchen towel, ensuring it's moist but not soggy.

Combine with Ingredients: In a mixing bowl, combine the softened bread with mashed potatoes, flour, eggs, grated Parmesan cheese, salt, and any desired herbs or spices.

Knead the Dough: Knead the mixture until a soft and pliable dough forms, adding more flour if necessary to prevent sticking.

Shape the Gnocchi: Divide the dough into small portions and roll each portion into ropes about 1/2 inch thick. Cut the ropes into small pieces to form the gnocchi.

Create Indentations: Using a fork or gnocchi board, gently press indentations into each gnocchi to create ridges that will help sauce cling to the pasta.

Cook the Gnocchi: Bring a large pot of salted water to a boil and carefully drop the gnocchi into the boiling water. Cook until they float to the surface, indicating they're done, usually for about 2-3 minutes.

Serve and Enjoy: Remove the cooked gnocchi from the water using a slotted spoon and serve with your favorite sauce, such as marinara, pesto, or brown butter sage sauce. Enjoy your homemade gnocchi from stale bread!
