Basic Ham and Bean Soup

Ingredients 8 cups water 1 pound dry great northern beans, sorted and rinsed ½ teaspoon salt 1 cup chopped carrots 1 cup chopped onion

½ stalk celery, chopped 1 teaspoon minced garlic 1 teaspoon mustard powder 2 bay leaves 1 ham hock 2 cups chopped ham ½ teaspoon ground white pepper, or to taste

Directions In a large pot, combine the beans and water; heat to a boil. After adding the salt, turn off the heat, cover the pot, and leave it for an hour.

Stir thoroughly and add the carrots, onion, celery, garlic, mustard, and bay leaves to the saucepan containing the beans. Bring to a boil after adding the ham hock, then lower the heat and simmer for an hour.

Take out and discard the ham hock. After adding the chopped ham, simmer for thirty minutes. Add ground white pepper to taste for seasoning.
