A Quick Vegetarian-Friendly Stuffed Tomatoes Recipe

4 medium beefsteak or other round tomatoes 1 cup panko bread crumbs 1⁄2 cup fresh goat cheese or feta 1⁄4 cup chopped fresh basil

1 Tbsp olive oil 2 tsp finely minced garlic Salt and black pepper to taste

Set oven temperature to 400°F. Slice off the tops of the tomatoes, then remove the seeds and core with a spoon and throw away.

Mix the bread crumbs, cheese, garlic, olive oil, and basil in a mixing bowl. Season with salt and black pepper.

Place the mixture inside the tomatoes.

After placing the tomatoes in a baking dish, bake for approximately 20 minutes, or until the tomatoes have somewhat caramelized and the bread crumbs have turned golden brown.
